  • measuring cups & spoons
  • whisk
  • ramkeins to bake the custard
  • knife to chop berries

Ingredients

  • 4 whole eggs
  • 1 cup greek yogurt
  • 1 tbsp lemon juice
  • 1 cup chopped strawberries
  • 2 tbsp powdered sugar optional, makes it sweeter
  • 2 tbsp honey
  • Olive oil or Butter for greasing ramekins

Instructions

  • Wash and chop strawberries into pieces and set aside.
    1 cup chopped strawberries
  • Crack 4 eggs in a bowl.
    4 whole eggs
  • To the eggs, whisk in honey and powdered sugar well.
2 tbsp honey, 2 tbsp powdered sugar
  • Mix in yogurt to the egg mixture.
    1 cup greek yogurt
  • Add lemon juice and strawberries. Mix well.
1 tbsp lemon juice, 1 cup chopped strawberries
  • Its time to make the water bath for the custard. Prepare ramekins by placing them in a metal pan. Grease sides of ramkein. Add water to the pan, only enough to where it touches the ramkeins half way. ( we dont want a situation where the water spills into the ramekins.)
  • Place pan with ramkeins in the oven. Bake at 350 F for about 10 – 15 minutes until sides looked baked and the center jiggles slightly.
  • Cool before serving.

Notes

Instead of individual ramekins, you could also use a Pyrex dish to bake the custard. Baing times with differ slightly.
Don’t forget the water bath. This is to prevent the sides from burning.
Instead of strawberries, any berries or fruit would . I love the combination of apples, bananas and oranges.
